Editorial comment to the March 2010 Number of IMARS Highlights

Welcome to this month’s issue of Highlights. This month I have selected articles written by our devoted contributing editors. I am sure you will enjoy reading
these articles. We start with a special feature of a culinary flavour – the Maillard reaction in traditional Japanese Miso soup. Moving on, we have two mechanistic and
therapeutic articles on vascular complications of diabetes. There is also an article on the application of Raman spectroscopy for novel detection of Maillard reaction
products and further commentary on pyrroles, melanoidins and acrylamide reactions.
This is a fine blend of commentaries that reflect well the synthesis of food chemistry with disease mechanisms and discovery therapeutics in current Maillard reaction
research.
