Invitation of the Organizers
on behalf of the Organizers, we kindly invite you to attend the First International Congress on Cocoa Coffee and Tea (CoCoTea 2011) to be held September 13-16, 2011, in Novara, Italy.
Starting with this first edition, we intend to set-up a new series of conferences, with the sponsorship of EuCheMS Food Chemistry Division and the International Society of Maillard Reaction (IMARS), particularly focussing on the science of cocoa, chocolate, coffee, tea, and related products. This field,
largely frequented from scientists from all over the world for many years, requires a dedicated event. Despite the extend of scientific literature, this field is likely to yield many new discoveries regarding the chemical quality, the technological advances, and the health-related aspects.
The most important idea of this conference is to offer an inter-disciplinary arena of discussion for scientists dealing with different aspects of three popular foods stimulating the central nervous system (chemistry, technology, metabolomics, nutraceutics, nutrigenomics, nutrigenetics, health).
CoCoTea will cover all the topics related to these foods, giving to the participants the opportunity to share innovative science.
Food chemists, food technologists, nutritionists, toxicologists and – particularly – food technologists and food engineers from industry, are warmly invited to participate. CoCoTea intends to create a novel scientific network, sharing opinions and opening novel interesting interdisciplinary friendships.
Besides all the scientific aspects, participants will experience the well-known arts and landscape of the Northern Italy, particularly of Novara town and the lake district of Piedmont, as well as to enjoy good food, fine wines, and some valuable technical visits.

Invited Keynote and Short Oral Lectures, as well as Posters, presented by scientists from academia and industry will contribute to form the Program of the Congress.
In order to inspire the participation of high level young scientists and PhD Students, a specific “best poster price” as well as “best oral communication prize” (participants under 35, presenting as first author) will be organized (the scientific committee will award the prices during the conference).
Some selected Invited Keynotes covering all the aspects of the conference will be the part of the program. Chemistry, Technology, Safety, Nutrition, and Health will be especially considered in this section of the CoCoTea Congress.
- Food Chemistry:
composition, quality and safety; analytical aspects (aroma compounds, bioactive substances, contaminants); chemical changes during fermentation, thermal processing, manufacturing, and shelf-life.
- Food Technology:
impact of processing on quality and safety; novel technologies and biotechnologies; availability and process sustainability; micro- and nano-encapsulation; packaging.
- Nutrition and Health:
functional ingredients; bioactive compounds and bioavailability; in vitro and in vivo studies, physiological effects of foods stimulating the central nervous system; health claims and regulatory aspects.

All accepted lectures and posters will be published in the Congress Proceedings (3-pages extended summary, figures/tables and references included). Deadline to submit abstracts: 15 February 2011. The possibility to publish results as extended abstract or full paper on an indexed Journal is under negotiation.

Refund requests can be submitted to the Congress Secretariat. 70% refund can be granted before June 15, 2011.
No refunds will be granted after this dead-line. All the refunds will be processed after the Congress.
The official language of the Congress will be English.
No translation will be provided
Accommodation: hotel of various categories will be selected and offered on the web site.
A shuttle service from the hotels and the Venue of the Congress will be provided.
